In August, when the Mediterranean sun is at its strongest, BellaTerra's producer waits for the perfect still conditions when the fior di sale crystals, in their distinctive pyramid shape, bloom like a flower and rise to the surface of the water. These delicate crystals are then quickly, but carefully removed by hand.
