


GNOCCHI SARDI - not to be confused with potato or ricotta gnocchi, these wonderful extruded little curls are a traditional shape hailing from the Italian island of Sardinia, originally shaped by hand using a reed basket or a wooden board pushing the dough over the surface to create the outside ridges and the sauce collecting inner curl.
